4 eggs, beaten
2 tsp vanilla essence
250g self-raising flour
2 tsp baking powder
25g ground almonds
1 tsp ground cinnamon
1 tsp ground mixed spice
2 tbsp demerara sugar
Preheat oven to 180°C. Grease and line a deep 20cm round cake tin.
Peel and core the apples. Cut into thick slices, toss in lemon juice and set aside.
Cream together the butter and sugar. Gradually add the eggs and the vanilla essence. Fold in the flour, baking powder, almonds and spices.
Tip half of the mixture into the tin and pile the apple slices on top, leaving a small gap around the edge. Spread the remaining batter over the apples and sprinkle with demerara sugar.
Bake for one hour or until cooked through. Dust with icing sugar and serve.
